Job Description:

Duties & Functions of the Food & Beverage Director

Overseeing all the Hotel’s F&B components emphasizing product quality, efficient service and profitability is the over-arching objective of the F&B Director.  There are other highlights to the F&B Director’s duties and functions which include:

Assist in the revision and/or creation of menus for ala carte outlets, special events, and employee meals and make selections for the wine list, alcohol tiers, and beer when necessary. Ensure ServeSafe standards are consistently applied in all aspects of F&B operations. Assist F&B department managers including Culinary in their areas of operation as business and/or situations warrant. Assist with month end inventory and verify counts with Accounting personnel Conduct daily walk through inspections of F&B operations verifying controls, quality, cleanliness, service standards, and security. Ensure front of the house train in all areas is being conducted.  Work to develop and enhance training subjects and programs. Partner closely with Catering Sales in implementing Banquet Event Orders and other special events

Magnolia’s Desired Qualifications for the Food & Beverage Director

There are many moving parts in our large scale F&B operations.  The desired qualifications are broad within the fields of F&B.  These desired qualifications include:

F&B department management experience in a Hotel or Resort operation or an upscale dining and/or club operation with banquet/catering experience in functions for up to 200.Experience with and knowledge of all F&B front and back of the house positions with the ability to quickly assess service situations. Ability to train and evaluate staff in the processes of Food & Beverage operations. Knowledge of liquors, wines, wine service, craft beers, and the selling techniques and ability to pass knowledge on to staff.

Basic accounting skills for conducting inventories, scheduling staff, analyzing monthly P&L statements, pricing menus, food and alcohol. Certified in ServeSafe food sanitation course and TIPS/TABC training. Experience dealing with F&B suppliers and contract negotiations.
